Marinade:
In a glass baking dish combine
1/2 Cup of White wine
1/2 Cup of Apple cider vinegar
1 Cup of Soy sauce
1/2 Cup of Brown sugar
3/4 Teaspoon of Red pepper flakes
Whisk until sugar is dissolved, then add
2-4 Garlic gloves, crushed
2 Bay leaves
Other ingredients needed:
12-15 Chicken drumsticks
2 Cups of Chicken broth
2 Tablespoons of Lemon juice
salt and pepper to taste
2 Tablespoons of chopped Parsley or Cilantro
It will look something like this:
Like so:
Refrigerate for 2 hours, turning the chicken halfway after the first hour.
Place chicken and marinade in a large, high sided skillet, adding 2 Cups of Chicken broth:
Bring to a boil over medium-high heat. Reduce heat to a simmer and cook for 45-50 minutes, turning the chicken every 20 minutes. Insert meat thermometer into thickest part of meat, if it registers 165 degrees F, it means meat is ready. (If you don't have a thermometer, with a fork and knife, cut through one of the chicken's drumsticks and see if chicken looks cooked, whitened.)
Remove chicken and place it in a serving dish. Leave liquid in the skillet, but discard the bay leaves and garlic cloves.
Whisk 2 Tablespoons of Lemon juice into liquid and bring to a boil. Cook until mixture thickens, about 2 minutes.
Season with salt and pepper. Pour sauce over chicken.
Sprinkle chopped parsley or cilantro.
Enjoy! :)
